Components
  • 2 tea cups of cooked spaghetti noodles
  • Two eggs
  • 2 tablespoons of shredded parmesan cheese
  • Three tablespoons of olive oil
  • season with salt as desired
  • burrata for serving
  • departures to assist
  • serve with sweet grape tomatoes
Setup phase
  1. This recipe is designed to make use of leftover boiled spaghetti (although you can also cook 100g of raw pasta). To make it easier to measure the cooked amount, gently press the noodles into the measuring cup. Ideally, use pasta that has been served with a simple sauce like olive oil or butter. However, if the spaghetti has been made with a richer sauce, such as bolognese or tomato, it will still work. In that case, allow any excess sauce to drain so the pasta sticks better to the eggs.
  1. In a small bowl, crack one egg at a time and pour it into a separate medium bowl. Whisk thoroughly with a fork to blend the egg whites and yolks, add a pinch of salt, and stir in the grated Parmesan cheese.
  2. Combine the cold boiled spaghetti with the eggs and thoroughly mix using tongs.
  3. Place a non-stick frying pan of approximately 20 cm over medium heat. Once heated, add water and olive oil, then tilt the pan to evenly coat the entire bottom – although it may seem like a lot of olive oil, this is the key to achieving crispy and golden noodles. Add the noodles with eggs and carefully press down with a spatula to create a nicely rounded shape.
  4. Cook the noodles over medium heat for 2 minutes. Reduce the heat, cover the frying pan, and continue cooking on low for approximately 5 minutes, or until the bottom is golden and the sides are firm.
  5. Place a large shallow dish over the skillet, hold the bottom of the dish with one hand, and quickly flip the skillet using the other hand. Return the pan to the heat and use a spatula to adjust the edges. Raise the heat to medium and cook the other side for an additional 2 minutes.
  6. Reduce the heat and allow the fryer to continue cooking for an additional 3 minutes, or until it firms up entirely and the bottom turns a deep golden color. This baking stage is done without the lid to guarantee a crispy texture. To test doneness, gently lift the edge with a silicone spatula.
  7. Move the fries onto a board and serve alongside pieces of burrata and a rocket salad with tomatoes.

NOTE: The fryer may be prepared ahead of time and served at room temperature.

Frita Formula

For every 1 cup of cooked spaghetti, combine 1 egg, 1 tablespoon of grated Parmesan cheese, and 4 teaspoons of olive oil to sauté in the frying pan. Keep in mind that the pan size should vary according to the quantity of noodles being prepared.
