Components
- One serving of chilled Lillet
- Two servings of club soda ice cream
- One lengthy strip of orange rind
- Two sprigs of rosemary
- ice cubes as desired
Setup phase
- Gently crush a sprig of rosemary inside the cup.
- Using tongs, grasp the folded rosemary branch in the center and bring it close to the stove’s flame. Allow the rosemary to crackle until smoke begins to appear. Place the rosemary carefully on the board and cover it with a cup turned upside down, trapping the smoke inside and infusing the cup with a smoky flavor. Let the glass soak up the aroma while you cut the orange peel strip.
- Using a vegetable peeler or a small sharp knife, slice a long strip of orange peel.
- Put the peel strip into the smoked glass (excluding the charred rosemary). Add lillet, ice cubes, and top off with club soda. Serve alongside the remaining fresh rosemary sprig.
NOTE: For a milder beverage, use three parts club soda and serve it in a taller glass.
