Components
  • 2 cups of frozen corn, approximately 300 grams
  • 1 cup (tea) of coarsely grated standard mines
  • 2 tablespoons of unsweetened natural yogurt
  • One egg
  • 2 cloves of garlic, peeled
  • 1/2 cup of instant polenta (tea variety)
  • Half a teaspoon of baking powder
  • Half a teaspoon of salt
  • freshly ground pepper to taste
  • Two sprigs of coriander
Mode of preparation
  1. Put the corn in a bowl and microwave it on a rotating setting for 2 minutes to defrost. Then, pour it into a sieve placed over a bowl and firmly press the kernels with your hand to remove excess moisture — this step is crucial for achieving the right dough consistency for rolling.
  1. Measure out half a cup of corn beans and set it aside, then put the rest into a food processor. Add garlic cloves, coriander leaves, salt, and pepper to taste. Blend thoroughly until crushed. Then, add an egg and yogurt and blend once more.
  2. Pour the batter into a bowl, then add the reserved corn kernels, grated cheese, 1/4 cup of polenta, and yeast. Stir thoroughly with a spatula, cover, and refrigerate for 15 minutes — this resting period is crucial for the polenta to absorb some moisture and for the dough to reach the right consistency; alternatively, you can prepare it the day before.
  3. To shape the cookies: spread the remaining polenta on a plate. Take 2 tablespoons of dough and form it into a ball (no need to worry about it sticking to your hands). Place the ball onto the polenta-covered plate and roll it until it’s fully coated. Set the coated dough ball on a plate and continue the same steps with the remaining dough.
  4. Heat the Electrolux line Air Fryer Oven by Rita Lobo to 200 °C and set it to bake for 12 minutes.
  5. Arrange all the cookies in the Air Fryer basket side by side, leaving some space between each one. Insert the basket into the Air Fryer, close the door, and bake for 12 minutes until done. Serve immediately afterward.
Advice for Planning

Shaped dumplings can be stored in the fridge for up to three days or frozen for as long as three months. To cook, place frozen or chilled dumplings directly into an Air Fryer preheated to 200 °C and bake for 12 minutes.

Follow the process step by step.
