Components
- 3 1/2 cups of cooked white rice
- One egg
- 1/4 cup of tea with milk
- Half a teaspoon of salt
- Three sprigs of parsley
- 1/4 cup of finely grated Parmesan cheese
- 40 g of crunchy cheese pieces
- grated nutmeg added as needed to taste
- Add ground pepper gradually, adjusting to your preference.
- Use oil to rub on hands and coat the cookies.
Ready state
- Rinse, dry, and roughly chop the parsley. Slice the shrewo cheese into 1 cm cubes.
- In the blender, combine half of the rice (1¾ cups), milk, and egg. Add salt, pepper, and nutmeg for seasoning, then blend for about one minute until the mixture is well shredded and the rice becomes paste-like. Pause blending occasionally to scrape down the sides of the container with a spatula to ensure the ingredients mix thoroughly.
- In a large bowl, combine the remaining cooked rice, parmesan cheese, chopped parsley, and beaten rice. Stir thoroughly with a spatula until you achieve a moist yet firm mixture—the beaten rice helps bind the dumpling mixture, while the cooked rice maintains the texture of the whole grains.
- To shape the dumplings: coat your hands with olive oil, take a portion of dough (approximately 2 tablespoons) and roll it into a ball about 3 cm wide. Create a hole in the dumpling using your finger and fill it with a cube of cheese. Press and roll it again to seal tightly, ensuring the cheese stays inside while melting. Place the dumpling on a plate and continue with the remaining dough. Since the rice dumpling dough is stickier, use a spoon to remove any excess dough stuck to your palms and reapply olive oil as needed during the process.
- Set the Electrolux air fryer by Rita Lobo to 180 °C and bake for 20 minutes.
- Coat 8 dumplings with olive oil, open the Air Fryer basket, and arrange the dumplings side by side, leaving some space between them to allow better air circulation — they will be cooked in two batches to ensure each dumpling develops a golden and crispy exterior.
- Close the basket and flip the cupcakes halfway through using tongs to brown them evenly and avoid cracking. Move the finished cookies to a plate and continue with the remaining ones. Serve immediately.
