Components
- 1 1/2 cups (tea) of fusilli pasta (or another type of short, dense pasta)
- 1 can of diced tomatoes
- 8 anchovy fillets
- Half an onion
- 1 garlic clove
- 10 black olives without pits
- 1 and 1/2 cups of tea water
- 4 tablespoons of olive oil Stroll
- 4 sprigs of basil
- A small amount of salt, about a pinch
- A quarter teaspoon of dried calabresa pepper
- shredded parmesan cheese for serving
Setup phase
- Prepare in advance: peel and finely chop the onion and garlic; wash and dry the basil leaves; slice the olives into rounds.
- Use a medium-sized pan (approximately 20 cm) over medium heat. Once heated, combine the water and olive oil, then add the onion, season with salt, and sauté for 3 minutes until softened. Next, add the anchovy fillets and garlic, stirring for an additional minute to break down the anchovies.
- Reduce the heat, add the peeled tomatoes along with their juice and water. Stir thoroughly to blend the flavors of the dish. Incorporate the noodles, olives, and half of the basil leaves. Season with Calabrian pepper and raise the heat to medium. Cook for 5 minutes once it begins to boil.
- Cover the pan and cook for an additional 10 minutes, stirring occasionally to prevent the noodles from sticking to the bottom. During this time, the water will begin to evaporate as the noodles cook and absorb the rich sauce.
- Split the noodles and sauce between two plates and serve alongside the remaining basil leaves and grated Parmesan cheese.
Are you able to keep it?
The sauce becomes dry and the noodles soften. If stored, it keeps for 2 days in the fridge. However, it’s better to make the correct amount.
