Components
  • 3 1/4 cups of wheat flour (tea)
  • Half a teaspoon of dry active yeast
  • Two tablespoons of salt
  • 13/4 taza (de té) de agua tibia
  • 4 tablespoons of extra virgin olive oil
  • Half a teaspoon of coarse salt
  • Three sprigs of rosemary
Setup phase
  1. In a big bowl, combine the flour, yeast, and salt. Pour in all the warm water at once and stir thoroughly using a silicone spatula. There’s no need to knead; just mix until the flour has absorbed all the water — the dough will be sticky, which is normal, so do not add extra flour. Note: the water should only be warm to initiate fermentation in the refrigerator; if it’s too hot, it may kill the yeast.
  1. Put 2 tablespoons of olive oil into a large bowl that has enough room for the dough to expand and double in size. Move the dough into the bowl containing the olive oil. Using a spatula, lift the dough from the bottom and turn it over to coat it with the olive oil—there’s no need to mix the oil into the dough, just ensure the surface is covered.
  2. Cover the bowl with plastic wrap to prevent the dough from drying out (alternatively, use a bowl with a lid). Place it in the refrigerator to ferment for a minimum of 12 hours and up to 36 hours — the dough will ferment gradually, and the high water content will help gluten develop without requiring soaking.
  3. Once the fermentation period is over, take the grill out of the Air Fryer basket and place the dough inside, making sure to scrape the bowl thoroughly to use all the olive oil. Attach the basket to the Air Fryer, which should be turned off, and allow the dough to rest for 50 minutes—this will help it reach room temperature and become more aerated before baking.
  4. Crush the coarse salt on the pillon to break it into smaller fragments, but avoid grinding it into powder. After allowing it to rest, spread the rosemary over the dough; dampen your fingertips with water and gently press the entire surface of the dough, being careful not to tear it. Then, sprinkle with coarse salt and drizzle with two tablespoons of olive oil mixed with water.
  5. Add filtered water to the Air Fryer’s reservoir and cook using the Air Fry + Steam setting at 200 °C for 30 minutes—preheating is not required.
  6. Use a silicone spatula to take the roasted food out of the Air Fryer, then let it sit in the grease before slicing and serving.

Note: The focusing can be prepared ahead of time and served at room temperature.

Punto de congelación

Slice the focus, then freeze it for up to three months. When ready to eat, thaw it slowly over low heat in a covered pan, in an electric oven, or even in an Air Fryer.
