Components
- Two-thirds of a cup (tea) of dried chickpeas
- one-quarter onion
- One small clove of garlic
- 4 sprigs of parsley
- 4 sprigs of coriander
- Half a teaspoon of salt
- Half a teaspoon of ground cumin
- Half a teaspoon of Syrian pepper
- Half a teaspoon of coriander seeds
- A small amount of ground cinnamon
- 2 tablespoons of all-purpose flour
- A quarter teaspoon of baking soda
- 1 tablespoon of olive oil
- freshly grated nutmeg, added according to taste
- Add ground pepper gradually to suit your taste.
- oil for coating
Setup phase
- Put the chickpeas in a bowl and cover them with water, using double the amount, for 24 hours.
- Once the chickpeas have drained on a sieve, spread a clean dish cloth on the countertop and thoroughly dry the grains. Ensuring the grains are completely dry is crucial to prevent the dough from becoming damp, which could cause the dumplings to break during baking.
- Remove the skin from the onion and garlic clove. Rinse and thoroughly dry the parsley and coriander leaves.
- Put the onion, garlic, parsley, and coriander into the mini-processor. Blend for approximately one minute until finely chopped. Then, add half of the beak grain, salt, and spices, and process until a paste forms—pause at least once to scrape the sides with a spatula for even mixing.
- Add the remaining chickpeas and blend again for 1 minute – the goal is to have the beans processed while retaining some small pieces.
- Place the falafel mixture into a bowl, then incorporate the baking soda, wheat flour, and olive oil. Stir thoroughly.
- To shape each falafel: scoop out a portion of the dough with a spoon and firmly compress it between your hands, forming a cup approximately 4 cm in size – initially, it is important to press evenly to compact the dough before rolling. Place the shaped falafel on a plate (or heat-resistant dish) and continue the same process with the remaining dough.
- Set the Electrolux digital air fryer by Rita Lobo to 190°C and cook for 12 minutes.
- During preheating, drizzle oil over each falafel, then open the Air Fryer drawer and arrange the dumplings side by side inside the basket.
- Close the drawer and it’s ready – no need to stir halfway through. Serve immediately with tomato salad, cucumber, herbs, and tahini sauce.
