Components
  • Two red bell peppers
  • Two 125g cans of sardines in oil
  • 8 anchovy fillets
  • Half an onion
  • 2 garlic cloves
  • 3 tablespoons of tomato paste
  • 2 tablespoons of olive oil Stroll
  • 1½ teaspoons of fennel seeds
  • A quarter teaspoon of dried calabresa pepper
  • add salt as desired
  • oil for seasoning and serving
Mode of preparation
  1. Rinse, dry, and slice the peppers lengthwise down the middle. Remove the seeds and cut the halves into 2 cm pieces. Slice the onion into 1 cm thick half-rings. Trim the garlic cloves and crush them lightly with the side of the knife blade to remove the peel.
  1. Place a medium-sized pan over medium heat. Once heated, combine the water and olive oil, then add the pepper, onion, and garlic. Season with a pinch of salt and cook for 15 minutes, stirring occasionally until the vegetables become very tender.
  2. In the meantime, drain the sardine oil, remove the pimples, and place the fish in the blender. Add the anchovy, fennel seeds, calabresa pepper, and tomato paste.
  3. When the vegetables are very tender, transfer them while still warm to the blender and blend until the mixture is smooth. Pause occasionally to scrape and mix the ingredients with a spatula for even blending, adding 1 to 2 tablespoons of filtered water if needed. Alternatively, you can use a food processor.
  4. Put the sardela back into the pan (no need to wash it) and cook over low heat. Let it simmer for an additional 4 minutes, stirring occasionally to enhance the flavors and thicken the mixture slightly – keep in mind that the sardela will firm up as it cools. Taste and adjust the seasoning if necessary.
  5. Pour into a pot and allow it to cool at room temperature for at least one hour before covering and placing it in the refrigerator. When serving, add water and oil to taste.

NOTE: sardela can be kept in the fridge for as long as 10 days.
