Para Chuchu Salda
Components
- 3 chayotes (approximately 500 g)
- Half a purple onion
- 1 bell pepper
- 1 garlic clove
- One liter of water
- juice of 1 lemon
- Three tablespoons of olive oil
- One bay leaf
- Three sprigs of parsley
- sodium chloride
Ready state
- Remove the peel from the chuchus, wash them, and thoroughly dry with a dishcloth to prevent slipping while cutting. Slice each chuchu lengthwise in half, then use a spoon to scoop out and discard the seeds. Cut each half lengthwise into two more pieces, creating four segments. Slice each segment diagonally into three pieces, each approximately 4 cm long. Using the flat side of the knife, crush and peel the garlic clove.
- Place the chuchu in the electric pressure cooker, add water to cover, include the garlic and bay leaf, and season with 2 teaspoons of salt. Close the lid, set the valve, and cook under pressure for 3 minutes.
- While the chayote is cooking, get the other ingredients ready. Peel and slice the purple onion into thin lengthwise strips. Place them in a bowl, cover with water, add ice cubes, and let it soak for 10 minutes to keep it crunchy and reduce its sharpness.
- Rinse, dry, and cut the pepper lengthwise down the middle. Use the tip of a spoon to remove and discard the seeds. Thinly slice each half. Rinse, dry, and pat the parsley dry.
- After three minutes, switch off the pan and open the valve to release the pressure—do not wait for the steam to escape on its own, as the chuchu might overcook and become too soft for the salad.
- Remove the water from the chuchu and place it in a bowl (discard the garlic and bay leaf). Drain the water from the onion and add it to the chuchu. Season with pepper and parsley, and dress with lemon broth, olive oil, and salt to taste. Refrigerate to chill while you prepare the ground meat.
TIP: You can also enjoy the warm chuchu salad if you like — it’s equally delicious.

Components
- 500 g of minced beef (cattle or duck)
- half an onion
- Two garlic cloves
- Half a tea cup of boiling water
- 2 tablespoons of extra virgin olive oil
- 1 teaspoon of ground cinnamon
- Five sprigs of parsley
- Add salt and ground pepper as desired.
- Chili beans seasoned with cumin for serving
- rice accompanied by fencing for serving
Setup phase
- Remove the onion skin and slice it into 0.5 cm thick wedges. Peel and finely slice the garlic. Rinse, dry, and chop the parsley.
- Heat a large frying pan over medium heat. Add 1 tablespoon of olive oil and place the meat in small portions; season with salt and pepper and allow it to brown undisturbed for about 5 minutes — this helps the ground meat develop color and flavor without releasing moisture.
- Pour in the remaining olive oil, add the onion, season with a pinch of salt and cinnamon, and cook for approximately 5 minutes, stirring thoroughly to break up the meat until the onion softens. Then, add the garlic and sauté for 1 minute to release its aroma.
- Gradually add boiling water while stirring thoroughly with a spatula to dissolve the flakes from the bottom of the pan and ensure the meat is well moistened. Turn off the heat, stir in the parsley, and serve alongside chayote salad, rice with beans, and cumin-flavored cassava beans.
