Components
  • Half of a large cauliflower (approximately 400 g)
  • 4 cups of rigatoni pasta (approximately 300 g)
  • 1 cup (tea) of finely grated standard mines
  • Half an onion
  • Two garlic cloves
  • 2 cups of tea with milk
  • Three bay leaves
  • Four sprigs of lemon thyme
  • season with salt as desired
  • freshly grated nutmeg to taste
Setup phase
  1. Take off the leaves and slice the cauliflower into 2 cm thick pieces lengthwise, including the stem — both the stalks and florets will be used in this recipe. There’s no need for precise cuts since the cauliflower will be cooked and blended afterward. Place the pieces in a bowl, cover them with water, and rinse thoroughly. Drain the excess water in a sieve while you prepare the other ingredients.
  1. Peel the onion and slice it into thin strips. Peel the garlic and slice it into thin pieces.
  2. In a large pot, combine the cauliflower, onion, and garlic. Pour in the milk, add the bay leaf, thyme, and season with 1 teaspoon of salt and nutmeg to your preference. Cook over medium heat with the lid partially open for about 10 minutes until it reaches a boil. Reduce the heat and simmer for another 10 minutes, or until the cauliflower is very tender — test with a fork to confirm.
  3. Using tongs, take out the bay leaf and thyme, then transfer the cauliflower with the milk to the blender. Blend until it becomes a smooth and creamy sauce. Taste and adjust the salt as needed. Set aside.
  4. Set the oven to 200 °C (moderate heat). Grease a 30 cm by 20 cm baking dish (or one that holds about 2.5 liters) with butter.
  5. Place a large pan with 3 liters of water over high heat (you can use the same baking pan as the cauliflower!). Once it boils, stir in 1½ tablespoons of salt, add the noodles, and cook for 5 minutes or according to the package instructions—the noodles should remain slightly raw in the center, as they will finish cooking in the oven with the sauce. Meanwhile, prepare the topping flour.
  6. Boil 1 cup of water and drain the noodles using a colander. Place the noodles back into the pan without any water and pour in the cauliflower sauce. Stir gently, slowly adding the reserved cooking water to make the sauce more fluid—around 1/2 cup will be needed. Keep in mind the sauce will thicken slightly in the oven; if it’s already creamy, the noodles could end up dry. Mix in the grated cheese and transfer the mixture to an ovenproof dish.
  7. Sprinkle with flour and bake in the oven to gratinate for approximately 15 minutes. Serve immediately alongside grilled tomatoes, radicchio leaves, nuts, and parsley.

Please provide the text you would like me to paraphrase.

Enjoy the oven and get ready for your next meal. Fish papillote is an excellent choice for this kind of preparation. Because the fish is cooked inside a paper-aluminum pouch, the scents of the two dishes remain separate. Be mindful of the oven time: while the noodles bake at 200 °C, the fish only needs 8 minutes to be done. Here is the recipe.
