Components
  • Two mature bananas
  • Two eggs
  • 1/2 cup of demerara sugar (tea)
  • 1/4 cup of oil (tea)
  • 1/4 cup of tea with milk
  • Half a teaspoon of ground cinnamon
  • 1 cup (tea) of all-purpose flour
  • 1 teaspoon of baking powder
  • A small amount of salt, about a pinch.
  • butter and wheat flour to seal the pans
  • 2 tablespoons of demerara sugar for sprinkling
  • A small sprinkle of cinnamon powder
Follow the process step by step.
Setup mode
  1. Knit with butter into 9 medium shapes measuring 7 cm in diameter, with a 4 cm diameter base and 3 cm height. Dust with wheat flour, brush with pickle to spread, and tap the sink to remove any excess.
  1. In a bowl, crack one egg at a time and move it to another medium bowl—this way, if an egg is bad, you won’t lose the others. Whisk with a wire whisk (or a fork) just enough to blend the whites and yolks. Add sugar, cinnamon, oil, and milk, then stir thoroughly. Incorporate the flour and mix once more.
  2. Remove the peel from the banana and cut it lengthwise into quarters, then slice into 0.5 cm pieces. Incorporate the banana pieces into the mixture and carefully fold them in using a spatula. Lastly, combine the yeast and salt.
  3. Using a scoop, place the batter into the cupcake liners, leaving approximately 0.5 cm of space at the top — the pans appear neat since the muffins rise more in the middle.
  4. Set the Electrolux Air Fryer Oven by Rita Lobo to 160°C and bake for 15 minutes.
  5. As the Air Fryer heats up, combine the 2 teaspoons of demerara sugar with a pinch of cinnamon in a small bowl and sprinkle the mixture over the muffins.
  6. Place the tiles on the two Air Fryer grills, attach the shelves, and shut the door. After 10 minutes, flip the grills to ensure the dumplings brown and cook evenly for the final 5 minutes—do not open the Air Fryer door before 10 minutes to allow the dumplings to rise properly and not become soggy.
  7. Using a dishcloth or glove, take out the Air Fryer’s racks with the baked muffins and allow them to cool before removing and serving.

Note: Muffins can be kept at room temperature for up to 2 days or frozen for up to 3 months. To thaw, microwave them for 30 seconds. Alternatively, you can defrost the muffins in an AirFryer at 160°C for 10 minutes.

Do you have a banana?

If you choose to use a different variety of banana, measure out 1 cup of the fruit, chopped, as specified in the recipe, and make sure to use ripe bananas.
