Components
  • One cup (tea) of unsalted roasted cashew nuts (approximately 150 grams)
  • Half a teaspoon of ground ginger
  • A quarter teaspoon of cayenne pepper
  • 1 teaspoon of sugar
  • Half a teaspoon of water
  • Half a teaspoon of olive oil (or any other oil)
  • salt according to preference
Ready state
  1. In a bowl, combine the chestnuts with spices, sugar, and salt according to your preference. Pour in the water and oil, then stir thoroughly to coat the chestnuts evenly with the seasoning.
  1. Put a typical non-stick frying pan on low heat. Add the chestnuts and let them heat for 1 minute without stirring, until the sugar begins to melt. Continue cooking the chestnuts on low heat, stirring occasionally for 15 minutes, until they turn golden and dry—be careful not to overcook, as the spices can overpower the chestnuts.
  2. Place the chestnuts on a small baking tray (or pillow) and allow them to cool fully before serving or storing. Enjoy them as a snack during happy hour, or paired with salads, risottos, or soups.
